Ingredients
  • 1 cup coconut flour
  • ½ cup coconut sugar
  • 1 tsp gluten-free baking powder
  • pinch dulse salt
  • ½ cup chopped dates
  • 1 cup grated organic carrot
  • 11/2 tsp chia seeds
  • 1 cup grated organic green apple
  • ½ cup coconut milk
  • ½ cup coconut oil
  • 6 free-range eggs
  • flaked coconut to garnish
Instructions
  1. Mix dry ingredients in one bowl and wet ingredients in another.
  2. Mix the wet ingredients INTO the dry ingredients, and add more water slowly if necessary.
  3. Spoon mixture into muffin tray and garnish.
  4. Bake for 30 mins at 180 degrees.
